Our friends Jenn and Logan invited our family over for dinner. We had a Mexican feast with all sorts of delicious fixings and toppings, to make tacos, burritos, nachos, salads, etc. Everything was delicious but this grilled chicken was the star of the meal! Everyone raved about the chicken! I asked Jenn about the recipe and she told me it is from Costa Vida’s blog. I have made this grilled chicken at least once a week ever since. It is simple, marinades for only 30 minutes and the taste is so YUMMY! The best part is it is SO versatile. It makes delicious tacos, burritos, quesadillas, enchiladas, taco salads, or maybe my favorite is by itself with a side of salad or hot veggies. Seriously, add this to the grill at your next BBQ and it will be a hit!
The marinade is as simple as throwing in all the ingredients and whisking together.
This marinade is ready for some chicken.
I like to marinade my meat in zip top bags because I can massage the marinade into the meat without getting it all over my hands and once I remove all the air and zip it up, it covers the meat on all sides for even marinating.
I heat the grill on high, about 450 degrees, and sear the meat well on both sides. Then I turn the heat down to about 325 degrees. This allows the inside to cook without drying out and burning the outside.
Chicken breasts are safe to eat at 165 degrees. I like to cook them to 160 degrees and then remove from the heat and cover with foil for 5-10 minutes, during which the carry-over cooking gets the chicken up to 165 degrees.
YUM! These chicken breasts are done and ready to be sliced. This time we are using the chicken for chicken tacos. ENJOY!
