Caramel Apple Pecan Cobbler
The apples in this cobbler cook and soften in the batter as it bakes and the top crisps up perfectly by the end of the baking time. As it bakes, the sugars and hot water poured on top “magically” create a warm caramel sauce at the bottom, that is absolutely destined to be spooned over ice cream. Make sure you’ve got some vanilla ice cream on hand to serve with this drool-worthy, warm dessert.
For the batter:
For the topping:
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, stir together flour, baking powder, salt, sugar, cinnamon and nutmeg. Stir well.
  3. Add chopped apples to dry ingredients, mix well. Set aside.
  4. In a medium bowl, stir together applesauce, milk, melted butter and vanilla. Set aside
  5. In a small bowl, make the topping but adding together the cinnamon, sugars, and chopped pecans.
  6. Pour wet ingredients into the apple and flour mixture. Stir until the batter is mixed together.
  7. Pour batter into an ungreased, 9×13″ baking dish.
  8. Sprinkle topping over the batter.
  9. Pour hot water over the topping. DO NOT STIR!
  10. Place in oven and bake uncovered for 50 minutes.
  11. Cool for 5-10 minutes. Serve with vanilla ice cream.
