  1. In a large pot, melt butter and allow to just begin to brown.
  2. Add chopped onion and saute until onion is very soft.
  3. Next add the sliced potatoes, water and bouillon or broth, and black pepper. Bring to a boil.
  4. Allow soup to boil for approximately 20 minutes, until the potatoes split when stuck with a fork.
  5. Using a potato masher, smash until all the large potato slices are broken down.
  6. Add sour cream. If wanting a smooth and creamier soup, use a stick blender to puree until all chunks are gone.
  7. Top with cheese and stir until the cheese is melted and completely incorporated into the soup.
  8. Serve immediately or keep warm, covered and stirring occasionally.
